Mediterranean Pot Roast

Ingredients

  •  1/2 cup mushrooms
  • 1/2 cup beef broth 
  • 1/2 cup red wine
  • 1 4- to 5-pound boneless chuck roast
  •   1large yellow onion, cut into wedges
  • 4 cloves garlic, peeled and minced
  • 1 tablespoon rosemary
  • 1/4 cup balsamic vinegar
  • 1 tbs oregano
  • 1 tsp Dijon mustard

Preparation

add all ingredients to large bag and freeze. Completely thaw before putting in crockpot. Cook on low for 8-10 hours. Serve with red wine and sauteed spinach.
