Honey Pulled Chicken with Coconut Rice


  • 1-2 chicken thighs per person (I used bone and skin on)
  • 3 cloves garlic, pressed
  • 1 tsp dried basil
  • 1/2c soy sauce
  • 1/2c ketechup
  • 1/3c honey
  • 1 14oz can coconut milk
  • 1 1/4c water
  • 1 tsp sugar
  • 1 pinch salt
  • 1 1/2c uncooked jasmine rice


Mix garlic, basil, soy sauce, ketechup, and honey in a small bowl. Place chicken thighs in crockpot and pour mixture over. Cook on low for 7-8 hours. Serve over rice.

For rice:
In large saucepan combine cocnut milk, water, sugar and salt. Stir until sugar is dissolved then stir in rice. Bring to boil over medium heat. Cover and reduce heat to low. Simmer for 18-20 minutes until rice is tender.

Parmesan Talapia




4 Talapia filets (I like the Costco brand the best)
1/2 cup Parmesan cheese
1/4 cup butter, at room temperature
3 tbs mayonnaise
2 tbs lemon juice
1 tsp dried basil


Salt and pepper to taste

  1. Preheat broiler
  2. Mix everything minus the fish
  3. Spread about 1 tsp over the fish and broil for about three minutes
  4. Flip fish over and cover filets generously with remaining spread. Return fish to broiler for an additional three to five minutes until fish is done and flakes easily with a fork.
It may not be the healthiest of all recipes, but even my husband (who highly dislikes fish) loves this, so I'll continue making it for eternity and then some.
